A delicious Yuzu Kosho Braised Chicken and Cabbage recipe.
Cut the cabbage into small pieces, mince the garlic, and slice the onion into strips. Layer the cabbage, onion, garlic, ginger, and mushrooms in a pot, then place the chicken thighs on top.
Add all seasonings except salt, plus about a small half-bowl of water. Cover with a lid and simmer over medium heat for 20 minutes.
After 20 minutes, stir everything together and taste for seasoning, adding salt if needed. Break the chicken into smaller pieces with chopsticks.
