A delicious Tomato Basa Fish recipe.
Score a cross on the bottom of each tomato. Bring a pot of water to a boil, blanch the tomatoes briefly, then peel and dice them into small pieces. Set aside.
Slice the basa fish fillet into pieces. Place in a bowl, add cooking wine, white pepper powder, and a spoonful of cornstarch. Toss to coat evenly and marinate for 10 minutes.
Heat oil in a pan. Add ginger, garlic, and scallions, stir until fragrant. Add the diced tomatoes, stir-fry for a moment, then add a spoonful of salt. Continue stir-frying until the tomatoes break down into a sauce. Add a small splash of water.
Gently add the marinated fish pieces into the pan, carefully stirring with chopsticks to separate them. Simmer for 3 minutes. Add half a spoonful of chicken bouillon (optional), stir to combine, then remove from heat. Garnish with chopped scallions on top before serving.
