Chicken Red Curry
Ingredients
- 1 yellow onion
- 500g chicken thigh
- 5 garlic
- 8 cremini mushroom
- 2 carrot
- 1 coconut milk
- 2 red curry paste
- 2 coriander powder
- 2 celery
- ½ pineapple
- 1 red bell pepper
Instructions
- Prep the ingredients and cut into pieces. In stages, add the onion, chicken pieces, garlic, carrots, mushrooms, and spices. Stir-fry until fragrant.
- Turn the heat to low. Add coconut milk and curry paste, then simmer for 10 minutes. Add the celery, bell pepper, and pineapple (cut to similar sizes), and continue cooking for a few more minutes.
- Serve over Thai jasmine rice.
