Step 1

Cut the beef tenderloin into small cubes, cut the king oyster mushroom into chunks, cut the bell pepper into small pieces, and dice the onion.
✅ Done when: All ingredients are cut into evenly sized cubes and pieces.

Place the beef cubes in a bowl, add the prepared marinade (salt, light soy sauce, oyster sauce, cracked black pepper, sugar, baking soda, cornstarch), and massage it in by hand until evenly coated. Finish with a drizzle of corn oil, mix well, cover, and refrigerate for about 2 hours.
✅ Done when: Beef is evenly coated, covered, and has chilled in the fridge for about 2 hours.

Step 3

In a small bowl, stir together the light soy sauce, oyster sauce, sugar, cornstarch, and water until smooth to make the sauce; set aside.
✅ Done when: The sauce ingredients are fully combined with the cornstarch dissolved, no lumps.

Heat a little oil in a wok over high heat, sear the beef cubes until golden on the surface, then remove and set aside.
✅ Done when: The beef cubes are golden brown on the outside.

Without washing the wok, add a little more oil, add the king oyster mushroom chunks and garlic cloves, and cook over medium-high heat until golden on the surface. Remove and set aside.
✅ Done when: The mushroom chunks and garlic are golden brown on the surface.

Without washing the wok, add a little more oil, add the cracked black pepper and stir-fry over low heat until fragrant, then add the bell pepper pieces and diced onion and stir-fry over high heat until fragrant.
✅ Done when: The black pepper is aromatic and the bell pepper and onion are fragrant and slightly softened.
Add the seared beef cubes and king oyster mushroom back to the wok and toss evenly, then pour in the prepared sauce and toss quickly until evenly coated. Serve immediately.
✅ Done when: The sauce has thickened and evenly coats every piece of beef and mushroom.
