Bottle Gourd Simmered with Dried Shrimp
鲜到掉眉毛的夜开花煮虾干🦐 · pan chinese cuisine
This home-style dish pairs bottle gourd with boat-dried smooth-shell shrimp, which bring their own natural sweetness and saltiness, so salt and chicken bouillon can be omitted entirely. If you are sensitive to shrimp aroma, a splash of Shaoxing wine can be added to reduce the fishiness. The whole dish is cooked at medium-high heat.

Steps
- 1
Step 1

Gather the bottle gourd and the dried shrimp.
✅ Done when: Both the bottle gourd and dried shrimp are on the counter and ready to prep.
- 2
Step 2

Peel the bottle gourd and cut it into slices.
✅ Done when: The gourd is fully peeled and cut into even slices.

Heat oil in a pan. Once hot, add the bottle gourd and stir-fry until the surface turns translucent. Add the dried shrimp and stir briefly, then add the oyster sauce and stir to coat evenly. Add a small amount of light soy sauce and stir well, then pour in a little water (enough to cover about two-thirds of the ingredients). Cover and simmer for 2-3 minutes, add the sliced scallion whites/greens, cover again for 1 minute, then remove from heat and serve.
✅ Done when: The bottle gourd slices look translucent, and after the final covered minute with the scallions the dish is ready to plate.

Step 4

Serve the dish — it is flavorful enough that you can finish a whole bowl on its own, without needing any other dishes alongside.
✅ Done when: The finished dish is served hot in a bowl and ready to eat.
