Dark Beer Braised Duck and Chinese Yam Clay Pot
黑啤老鸭山药煲 · pan chinese cuisine
Duck and Chinese yam are a classic pairing: the soft, starchy yam highlights the duck's savory flavor and balances its richness. In traditional Chinese food therapy, duck is considered nourishing to the lungs, and paired with yam it is valued for supporting digestion and easing coughs. The author notes the finished sauce was so good it got mixed into the last of the rice. Tips from the source: the braising water amount and timing are approximate and will vary with the duck; if you don't like yam, you can stop after the duck is fully braised.

Techniques you'll use
- Pan-frying (jian) ↗
Sear food in a shallow layer of oil, one side at a time.
- Aromatic blooming (bao xiang) ↗
Bloom ginger, garlic, and chili in hot oil to build the aroma base.
- Stir-frying ↗
Cook small pieces in stages, then bring them together while their textures are distinct.
- Simmering (dun) ↗
Gentle low-heat cooking in liquid until flavors merge and meat softens.
Steps
- 1
Step 1

Prepare the ingredients. Rinse the duck well and soak it in clean water for a while to draw out the blood.
✅ Done when: The duck pieces are clean and the soaking water stays mostly clear.

Heat the pot and add a little oil, then add the ginger slices. Using kitchen scissors, trim the fattier pieces of skin from the duck and fry them in the pot to render the fat — this adds aroma without making the dish greasy. If your duck is lean, use only a little oil; if it is fatty, you may not need any oil at all.
✅ Done when: Fat has rendered from the duck skin pieces and the ginger slices are fragrant.

Fry the fatty pieces until they shrink down, as shown. You can discard them now or leave them in to braise — that is up to you.
✅ Done when: The fatty pieces have visibly shrunk and turned golden.

Add the garlic, dried chilies, and Sichuan peppercorns and stir-fry briefly to release their aroma.
✅ Done when: The aromatics smell fragrant and the chilies have slightly darkened.

Add the duck pieces and stir-fry.
✅ Done when: The duck pieces are evenly mixed with the aromatics and heated through.

Stir-fry until the duck's color deepens, then add the cooking wine (a bottle cap's worth).
✅ Done when: The duck has turned a deeper, darker color and lost its raw look.

Add 1 1/2 spoonfuls of light soy sauce and stir-fry to coat evenly.
✅ Done when: Every piece of duck is evenly coated with the sauce.

Step 8

Pour in the dark beer. Since this duck is a mature bird, add some water as well.
✅ Done when: The liquid covers the duck pieces.
- 9
Step 9

Make sure the liquid covers the duck pieces.
✅ Done when: The duck is fully submerged in the braising liquid.
- 10
Step 10

Bring to a boil.
✅ Done when: The liquid is at a rolling boil.
- 11
Step 11

Transfer everything to a clay pot (or other heavy pot).
✅ Done when: All the duck and liquid have been moved into the clay pot.

Cover, bring back to a boil, then reduce to low heat and simmer slowly.
✅ Done when: The pot is simmering gently at low heat with the lid on.
- 13
Step 13

While the duck simmers, prepare the yam: wash, peel, and cut into rolling chunks, then keep them in water to prevent browning. Cut the scallions into short sections and set aside a small piece of rock sugar.
✅ Done when: The yam chunks are cut and soaking in water so they have not darkened.
- 14
Step 1460 min
Low heat
After the duck has braised for about an hour, open the lid and add the rock sugar, then season with a little salt and white pepper.
✅ Done when: The rock sugar has dissolved and the seasonings are stirred in.

Continue braising until about an hour and a half total.
✅ Done when: The duck has braised for roughly 90 minutes total.
- 16
Step 16

Test the duck — a chopstick should pierce it easily (it is edible at this point even without the yam). If the liquid has reduced too much, add a little boiling water and stir so the bottom does not scorch.
✅ Done when: A chopstick pierces the duck meat with little resistance.
- 17
Step 17

Add the yam chunks.
✅ Done when: The yam chunks are nestled into the braising liquid.

Simmer until the yam is soft and tender, then scatter the chopped scallions on top and serve.
✅ Done when: The yam is soft and gives easily when pressed, and the scallions are sprinkled on top.
- 19
Step 19

One more look at the finished dish.
✅ Done when: The dish is fully assembled and ready to serve.
