Five-Minute Cumin Pan-Seared Lamb Ribs
五分钟快手孜然香煎羊排 · pan chinese cuisine
These lamb ribs were fresh from Costco; if using frozen ribs, thaw them completely before cooking. Lamb pairs beautifully with cumin, and beyond salt no other seasoning is needed. The key: no oil is added. When the pan is hot, the fat in the ribs renders out, the surface browns and seals the juices inside, and turning off the heat lets the interior finish cooking gently at a lower temperature.
