This guide comes from years of personal experience with foraged ginkgo nuts. The key tricks are removing the soft, foul-smelling outer flesh with gloves, cracking the shells through a small towel so they don't fly everywhere, and pushing out the bitter embryo with a toothpick.

Techniques you'll use

Steps

  1. 1

    Step 1

Hand-Shelling Ginkgo Nuts — step 1 visual checkpoint.

In golden autumn, when ginkgo nuts have fallen to the ground, it's harvest time.

✅ Done when: The ground beneath the ginkgo trees is covered with fallen nuts ready to collect.

  2. 2

    Step 2

Hand-Shelling Ginkgo Nuts — step 2 visual checkpoint.

Wearing gloves, gather the larger nuts and remove the soft, foul-smelling outer flesh.

✅ Done when: Each nut is freed of its soft outer pulp, leaving the clean hard shell.

  3. 3

    Step 3

Hand-Shelling Ginkgo Nuts — step 3 visual checkpoint.

Rinse the nuts several times, add a little baking soda to remove the odor, and air-dry them until the shells are completely dry — unhappy little "pistachios."

✅ Done when: The shells feel completely dry to the touch after air-drying.

  4. 4

    Step 4

A hard-earned tip: on a cutting board, place about ten nuts at a time inside a small towel and tap each one through the towel until it cracks. This makes them easy to crack and keeps shell fragments from flying everywhere. Pliers, the back of a knife, and nutcrackers all work worse than this method.

✅ Done when: Each nut audibly cracks when tapped through the towel.

  5. 5

    Step 5

Hand-Shelling Ginkgo Nuts — step 5 visual checkpoint.

The cracked-open nuts, each split like a happy little pistachio.

✅ Done when: Every shell is split open, exposing the nut inside.

  6. 6

    Step 6

Hand-Shelling Ginkgo Nuts — step 6 visual checkpoint.

They've all cracked open like little pistachios.

✅ Done when: All the nuts are visibly cracked and ready to be shelled.

  7. Hand-Shelling Ginkgo Nuts — step 7 visual checkpoint.

After shelling, boil the nuts in a pot; the thin inner skin comes off naturally and floats to the surface.

✅ Done when: The loosened skins float up to the surface of the boiling water.

  8. 8

    Step 8

Hand-Shelling Ginkgo Nuts — step 8 visual checkpoint.

Rinse the peeled nuts in cold water — each one a cute little nut.

✅ Done when: The nuts are cool to the touch with their skins fully removed.

  9. 9

    Step 9

Hand-Shelling Ginkgo Nuts — step 9 visual checkpoint.

Remove the embryo: press the flat end of a toothpick against the pointed tip of each nut and push — the bitter little core slides right out. Surprisingly satisfying.

✅ Done when: The bitter embryo is pushed out of each nut, leaving it hollow at the tip.

  10. 10

    Step 10

Final step: bag the nuts and freeze them. Use eight or nine at a time in soups or stir-fries — delightfully chewy and delicious.

✅ Done when: The nuts are bagged and stored in the freezer, ready to use as needed.
