Made as a way to use up two leftover pomelos at home: rather than let them go to waste, the fruit is turned into a jam-style preserve. Red-fleshed pomelo gives the prettiest color.

Techniques you'll use

Steps

  1. 1

    Step 1

Honey Citron Tea Without the Peel — step 1 visual checkpoint.

Peel the pomelos and separate the flesh into segments, removing the peel and membranes. This is tedious solo work, so it helps to have a partner pitch in.

✅ Done when: Done when all the fruit is peeled and you have bowls of clean pomelo flesh.

  2. 2

    Step 2

Honey Citron Tea Without the Peel — step 2 visual checkpoint.

Two pomelos yield about three large bowls of flesh; red-fleshed pomelo has a more beautiful color.

✅ Done when: Done when the flesh is fully separated and piled into bowls, with a vivid pink-red color if using red pomelo.

  3. 3

Honey Citron Tea Without the Peel — step 3 visual checkpoint.

Add 300 g of yellow rock sugar and 300 ml of water, and bring to a boil over high heat, then let it keep cooking.

✅ Done when: Done when the mixture is at a rolling boil with the sugar dissolving into the liquid.

  4. 4

    Step 4

    Medium-high heatSimmering (dun) ↗
Honey Citron Tea Without the Peel — step 4 visual checkpoint.

Stir constantly as it cooks. Use a nonstick pot, not an iron one. It will slowly bubble and thicken into a sticky, syrupy consistency — keep cooking a little longer even when it seems nearly done.

✅ Done when: Done when the mixture has turned thick, glossy, and sticky as it bubbles.

  5. 5

    Step 5

Honey Citron Tea Without the Peel — step 5 visual checkpoint.

Once the watery liquid has cooked off and the mixture is thick and sticky, let it cool briefly until just warm, then stir in some of the honey. The preserve is finished.

✅ Done when: Done when no watery liquid remains, the mixture is viscous and sticky, and it has cooled to warm before the honey goes in.

  6. 6

    Step 6

Honey Citron Tea Without the Peel — step 6 visual checkpoint.

Serve and enjoy — delicious as honey citron tea.

✅ Done when: Done when the finished preserve is being served and tasted.
