Loquat, Snow Pear, Lily Bulb and Tremella Soup
枇杷雪梨百合银耳汤 · pan chinese cuisine
This soup is a classic cold-weather home remedy drink in Chinese home cooking. Snow pear is prized for soothing the throat, tremella for moistening the lungs, loquat for calming coughs, and lily bulbs for relieving dryness. Rock sugar adds a clean, mellow sweetness without being cloying, making the soup suitable for all ages. When buying rock sugar for nourishing soups, look for traditional multi-crystal (old-style) rock sugar with irregular crystals, clean and translucent, free of added colorings.

Steps

Step 1

Prepare all the ingredients.
✅ Done when: All ingredients are measured out and laid out ready on the counter.

Step 230 min

Soak the tremella in water for 30 minutes, trim off the root, and tear it into small pieces. Rinse the lily bulbs in water. Peel the snow pear and cut into small pieces. Peel and pit the loquats and cut into chunks.
✅ Done when: The tremella is fully softened and pliable after its 30-minute soak, and all fruit is peeled, pitted, and cut.

Add the tremella, lily bulbs, and rock sugar to a small pot with water to cover, and simmer over medium heat for about 30 minutes, until the tremella begins to turn slightly gelatinous.
✅ Done when: After about 30 minutes, the liquid looks slightly viscous and the tremella has a faintly gelatinous texture.

Add the cut pear pieces and simmer for another 10 minutes so the pear flavor infuses into the soup.
✅ Done when: After 10 minutes, the pear pieces have softened and the broth tastes of pear.

Once the pear pieces turn translucent, add the loquat and boil over high heat for 8 minutes, reducing the soup to about 2 bowls. Ladle into bowls and serve.
✅ Done when: The pear pieces are translucent, the liquid has reduced to about 2 bowls, and the soup is ready to serve.
