Steps

Put the cleaned pork tripe into a pot of cold water with Sichuan peppercorns and ginger, and boil for 5 minutes.
✅ Done when: The tripe has simmered for 5 minutes and looks blanched and firm.
- 2
Step 2

Meanwhile, cut the fresh chiles into diagonal sections, slice the ginger and garlic, cut the dried chiles into sections, and set the star anise aside.
✅ Done when: All the aromatics are cut and arranged, ready to use.
- 3
Step 3

Remove the tripe, rinse it in hot water, cut it into strips, and slice the ginger.
✅ Done when: The tripe is rinsed and cut into even strips.

Place the tripe in a pressure cooker with enough water to cover it, plus ginger slices and white peppercorns; cook on the soup mode. Alternatively, bring to a boil in a clay pot, then reduce to low heat and simmer for 1.5 hours.
✅ Done when: The soup mode has finished (or the soup has simmered on low for 1.5 hours) and the tripe is tender.
- 5
Step 5

From the finished tripe soup, take out a portion of the tripe strips and set them aside for the stir-fry.
✅ Done when: A portion of tender tripe strips is reserved for the stir-fry.
- 6
Step 6

Season the remaining soup to taste with salt and ground white pepper, and sprinkle with chopped scallions if you like. The pure tripe soup is now ready.
✅ Done when: The soup is seasoned to taste and ready to serve.

Heat oil in a wok, add the prepared ginger, dried chiles, garlic, and star anise, and stir-fry until fragrant.
✅ Done when: The aromatics are sizzling and smell fragrant.

Add the reserved tripe strips and stir-fry evenly over high heat.
✅ Done when: The tripe strips are heated through and evenly coated.

Add the green and red chiles and stir-fry until the chiles are just cooked through.
✅ Done when: The chiles are bright in color and just tender but still crisp.
- 10
Step 10

Season with salt, light soy sauce, and oyster sauce to taste.
✅ Done when: The tripe is evenly seasoned with the sauces.
- 11
Step 11

Plate and serve.
✅ Done when: The stir-fry is plated and ready to eat.
