Pan-Fried Sophora Flower Cakes
槐花煎饼 · northern cuisine · North China
The author grew up in a courtyard home with two big sophora trees out front. Every spring the blossoms filled the alley with fragrance, and neighbors would gather like it was a festival, climbing trees and rooftops to harvest baskets and basins of flowers. For days afterward, every household would cook the blossoms in many ways — porridge, scrambled with eggs, pancakes, steamed dishes, buns, and dumplings. This recipe is a chewier, more textured take: instead of a soft batter, the flowers are tossed with just enough flour to hold them together, highlighting the whole blossoms.

Techniques you'll use
- Pan-frying (jian) ↗
Sear food in a shallow layer of oil, one side at a time.
Steps
- 1
Step 1

Pick through the sophora flowers, removing leaves, stems, and any other debris, then wash them clean.
✅ Done when: Done when no leaves, stems, or debris remain and the flowers are clean.
- 2
Step 2

Drain the flowers well, add the flour, and mix with chopsticks. Add the salt and mix again. If the mixture seems a bit dry, add a small amount of water — not too much.
✅ Done when: Done when the flour and salt are evenly distributed and the mixture just holds together.
- 3
Step 3

Grab a handful of the mixture and press it flat into a small cake. You can wear gloves if you like; the author didn't and got the mixture all over her hands.
✅ Done when: Done when each portion holds its shape as a flat, compact cake.

Heat a suitable amount of oil in a flat-bottomed skillet. Once the oil is hot, add the small cakes and fry until golden on both sides.
✅ Done when: Done when both sides of the cakes are golden brown.

Step 5

Serve — the fragrance is wonderful and fills your mouth with every bite. Compared to soft batter-style pancakes, these have a denser, chewier texture and a full sophora-flower aroma.
✅ Done when: Ready to eat when the cakes are golden on both sides and fragrant.
