Pure Oat Flour Noodles (Youmian)

纯莜面面条 · northern cuisine

Oat flour noodles are a traditional staple of Shanxi and Inner Mongolia cuisine. Because pure oat flour has little gluten, the dough is scalded with boiling water to make it workable, then rolled and steamed rather than boiled.
