Salt-Roasted Ginkgo Nuts
盐烤银杏果 · pan chinese cuisine
Ginkgo nuts are mildly toxic, and adults should not eat more than about 20 nuts per day. The toxic compounds are water-soluble, so soaking before roasting is important — the author learned this the hard way, skipping the soak once and getting a stomachache. Ginkgo nuts are also traditionally valued for their beneficial compounds. Note: do not eat too many at once, and be especially careful with children.
