Steps
- 1
Step 1

Prepare all the ingredients.
✅ Done when: All ingredients are measured out and within reach before cooking begins.
- 2
Step 2

Core the pears.
✅ Done when: The core and seeds are fully removed from each pear.

Blanch the pork bones in boiling water, then rinse them under cold water.
✅ Done when: The bones are no longer raw-looking on the surface and are cool enough to handle after the cold rinse.

Step 4

For the sweet and bitter apricot kernels: if you have a strainer bag or soup bag, it is best to have them cracked before simmering, which works much better. Without a bag, they will float on the surface of the finished soup, and since bitter apricot kernels are naturally bitter, the soup will taste bitter. If you keep them contained in a bag or leave them uncracked, the soup will not turn bitter.
✅ Done when: The kernels are cracked and secured in a soup bag (or left whole), ready to add to the pot.

Put all the ingredients into a pot with cold water and bring to a boil over high heat.
✅ Done when: The pot reaches a rolling boil over high heat.

Reduce to low heat and simmer for about 45 minutes; add the pears during the first 20 minutes.
✅ Done when: The soup has simmered about 45 minutes on low heat, with the pears in for the first 20 minutes.
