Steps

Step 1

Tear the seitan into strips by hand. Rinse the green peppers, remove the seeds, and cut into shreds.
✅ Done when: The seitan is in even strips and the pepper shreds are seedless and uniformly cut.

Slice the garlic cloves and cut the chilies into shreds. Blanch the torn seitan: drop it into boiling water, and once the water returns to a boil, remove the seitan and drain well.
✅ Done when: The water has come back to a boil and the seitan is drained of excess water.

Heat oil in a wok, add the chili shreds and garlic slices first and stir-fry until fragrant, then add the drained seitan. Stir-fry over high heat for 1-2 minutes, then season: add dark soy sauce for color, plus oyster sauce and light soy sauce.
✅ Done when: The garlic and chilies are fragrant and the seitan is evenly coated after 1-2 minutes of high-heat stir-frying.

After stirring evenly, add the green pepper shreds. Season with a small amount of salt and chicken bouillon, plus sugar, cumin powder, and chili powder. Continue stir-frying for about 2 minutes.
✅ Done when: The pepper shreds are just tender-crisp and everything is evenly coated with the spices after about 2 minutes.

Step 5

Finish with a spoonful of white sesame seeds stirred in, then serve - it makes the dish extra fragrant. The texture should be chewy and springy.
✅ Done when: The sesame seeds are evenly distributed and the dish is hot and ready to serve.
