Cut the dried tofu sheets into pieces, cut the hot green peppers into chunks, and slice the garlic. Make the sauce: mix 3 spoonfuls of light soy sauce, 1 spoonful of dark soy sauce, half a spoonful of cornstarch, half a spoonful of oyster sauce, and a bowl of water.
✅ Done when: The sauce ingredients are fully combined and the vegetables are all cut and ready to cook.

Bring a pot of water to a boil and blanch the dried tofu sheets for 1 minute, then remove and set aside.
✅ Done when: The tofu sheets have been in the boiling water for 1 minute and are heated through.

Heat oil in a wok, stir-fry the garlic slices, then add the dried tofu sheets and the sauce mixture. Alternatively, you can first stir-fry the green peppers until just cooked, then add the tofu sheets and sauce.
✅ Done when: The garlic is fragrant and the tofu sheets are evenly coated in the sauce.

When the sauce has thickened, add the green peppers and half a spoonful of salt. Continue stir-frying until the peppers are just cooked, then serve.
✅ Done when: The sauce is thick and glossy and the green peppers are bright green and just tender.
