A delicious Poached Sea Bass recipe.


Slice the ginger, cut the scallion whites into segments; julienne the scallion greens and chili peppers.

Bring a pot of water to a rolling boil, add scallion segments, ginger slices, oil, and salt.

Add the fish pieces. When the water just returns to a gentle simmer, turn off the heat.
