Salt-Boiled Pork
Ingredients
- 700 pork
- 21 salt
- a small handful (optional) Sichuan peppercorns
- 1 star anise
Instructions
- 700g pork
- Pour salt into a wok
- Add Sichuan peppercorns and 1 star anise. You can skip the peppercorns if you don’t like the flavor.
- Stir constantly over low heat
- Toast until the salt changes color.
- Don’t wash the pork. Once the salt mixture has cooled, pour it over the meat.
- Rub the salt mixture evenly all over the pork by hand.
- After coating evenly.
- Poke many holes with a toothpick. Marinate overnight, flipping halfway through.
- After marinating, rinse the pork thoroughly with water several times.
- Place the rinsed pork in a pressure cooker, add enough water and 2 slices of ginger. Cover and bring to a boil, then reduce to low heat and cook under pressure for 10 minutes (12 minutes if you prefer it more tender). Turn off the heat and let it sit for another 30 minutes before removing. Don’t discard the broth — it’s excellent for cooking noodles!
- Let it cool before slicing so the pieces don’t fall apart.
- Enjoy as-is — incredibly fragrant, not tough or dry, perfectly seasoned. Or cook some noodles and top with a few slices of this pork for an amazing meal!
