A delicious 1-Minute Poached Chicken Breast (Tender, Soft & Effortless) recipe.

Rinse the chicken breast. Cut the scallion into segments and slice the ginger. Fill a pot with cold water (enough to submerge the chicken) and bring to a boil. Once boiling, add the chicken breast, 1 tsp salt, 1 tsp Sichuan peppercorns, 2 star anise pieces, 1 tbsp cooking wine, scallion segments, and ginger slices. (Important: wait until the water is fully boiling before adding the chicken!) The water temperature will drop significantly. Once the water returns to a boil, cook for 1 minute.

Turn off the heat, cover with a lid, and let it sit for 30–40 minutes. (Make sure to keep the lid on!)

Remove the chicken and pierce it with chopsticks. If no pink liquid comes out, the chicken is fully cooked.


Shred the chicken and toss with fresh vegetables for a salad, or stir-fry with vegetables.

You can also make lemon black pepper chicken breast — tangy, healthy, and delicious for weight loss.

The leftover poaching broth is flavorful and clear, with no scum. Use it as stock for stir-fries, soups, or noodle soups.

Add a little cabbage and sausage to the broth (no need to sauté or add oil), season with a pinch of salt — incredibly savory!
