  1. Step 1 Detail

    Cut the pork into large chunks. Place in a pot with cold water, add the aromatics (scallions, ginger, garlic, star anise, cinnamon), and bring to a boil over high heat. Once boiling, remove the lid and continue cooking until a chopstick can be easily inserted into the bottom of the meat chunks.

    Remove the meat chunks and let them cool. Prepare a bowl filled with salt. Roll each piece of meat in the salt to coat evenly, then place them into a pre-prepared large container with a tight-fitting lid. When ready to eat, rinse off the surface salt from the meat — otherwise it will be too salty. Notes: 1) For longer storage, use more salt. Even so, the meat will eventually spoil over very long periods — this method is not as effective as freezing. 2) Besides stir-frying, the preserved meat can be sliced and tucked into steamed buns or corn flatbreads — delicious!
