A delicious Master Pork Filling – Perfect for Dumplings & Wontons recipe.

Add water to the ground pork and stir clockwise until it becomes sticky and pasty. (I used cooled tea for extra flavor.) Add chopped scallions, salt, ginger powder, five-spice powder, oyster sauce, light soy sauce, sesame oil, and Sichuan pepper oil. Continue stirring clockwise until well combined. Finally, add cooled cooked oil and stir thoroughly to seal in the moisture. Done! Portion and freeze. When craving dumplings, move a portion from freezer to fridge in the morning, and it’s ready to use after work. Or take it out the night before and wrap dumplings in the morning. Super convenient.

I used a portion of this filling to make sow-thistle wontons. This master filling pairs amazingly with celery, crown daisy, napa cabbage, pickled Chinese cabbage, green peppers… it’s a versatile all-rounder. Goes great with anything.
