A delicious Salmon, Asparagus & Mushroom Claypot Rice recipe.
Marinate the salmon with salt, olive oil, and black pepper for 10 minutes. Slice the button mushrooms, halve the morels, and finely chop the scallion white.
Pan-sear the salmon on both sides until golden, then remove. Using the remaining oil in the pan, sear the asparagus briefly and set aside.
Add olive oil to the pan and sauté the chopped scallion white until golden and fragrant.
Add the mushrooms and cook until they release their moisture. Pour in the white wine and let the alcohol cook off. Add 1 tablespoon of soy sauce.
Add the rice and water in a 1:1 ratio. Season with black pepper and salt. Stir well, then cover and simmer on low heat for 10 minutes.
Add the seared salmon and asparagus, gently stir, cover and simmer for another 2 minutes.
