A delicious Pork and Celery Dumplings recipe.

Mince the vegetables, add salt, and squeeze out excess moisture — but not too dry, or you’ll lose that fresh vegetable aroma.

Add oyster sauce, light soy sauce, ginger powder, and minced scallions to the ground pork. Mix in the minced celery and cabbage, add sesame oil, and stir well. Season with five-spice powder, salt, and cooking oil, then stir to combine evenly.

Make the dumpling wrappers using high-gluten flour for the best texture. Roll out the wrappers and fill them.

Bring a pot of water to a boil, drop in the dumplings. When the water returns to a boil, start timing — 3 minutes is the perfect doneness for my taste.
