I had so much dried salted fish from home that I was tired of cooking it in braised dishes, so I tried this method – it’s delicious eaten on its own or paired with eggplant. A delicious Dry-Fried Salted Fish Pieces recipe.

Prepare all the ingredients and set aside. Soak the salted fish pieces in water for a while, then wash and cut into small pieces, about 1 cm thick.

Heat plenty of oil in a pan and pan-fry the fish pieces until half-crisp.

Fry both sides until golden brown. If one side is browning faster, flip and continue frying the other side. Add sliced ginger and fry together for a bit to remove fishiness and add aroma.

Once both sides are golden brown, add the remaining aromatics and stir-fry over high heat until fragrant. Add light soy sauce and a splash of water, then cook until the liquid reduces completely. You can also add Sichuan peppercorns and dried chilies if you like, or sprinkle chili powder before serving — a perfect drinking snack that gets better with every bite. The pan-fried fish pieces also pair wonderfully with stir-fried eggplant strips.
