A delicious Air Fryer Shredded Chicken Jerky recipe.
Place whole chicken breasts in cold water and blanch. Add scallions, ginger, star anise, bay leaves, Sichuan peppercorns, and cooking wine.
Let cool until warm to the touch, then shred into strips. Don’t make them too thick or they won’t absorb flavor well.

Add BBQ seasoning, fine chili powder, salt, MSG, white sesame seeds, and a touch of sesame oil (just a little for fragrance). Mix well and marinate for 1-2 hours.

Air fry at 180°C for 1 hour. Flip halfway through. Reduce time if using less chicken. Adjust based on preference — cook longer for drier, chewier jerky.
