A delicious Roasted Halibut Head with Spring Onions recipe.

Use kitchen shears to open the halibut head, remove the gills, and rub with pepper and salt. Coarse black pepper and sea salt give a more aromatic flavor.



If using a small head (about 200g), it is already ready to eat at this point — tender, juicy, and flavorful. If you prefer it more well-done, remove the spring onions and roast for another 5-8 minutes. The spring onions can be eaten first — they turn wonderfully crispy and fragrant.

After the extra roasting, the skin becomes firmer with a slight char, and the milky aroma intensifies. Both versions are delicious in their own way.
