A delicious Tomato-Braised Triangular Tofu recipe.



Heat oil in a wok. When hot, add minced garlic and sauté until fragrant. Add the tomatoes and stir-fry over medium-high heat. Season with salt and a spoonful of tomato paste (or ketchup) for a richer tomato flavor — this is optional. Stir well and cook until the tomatoes break down and release their juices.

Add a little more minced garlic, then add the triangular tofu and toss to combine. Add a splash of water, cover, and braise over medium heat for 3 minutes.

After 3 minutes the tofu will have softened. Uncover, taste and adjust seasoning. Add a touch of oyster sauce for umami. Toss in the white parts of the garlic sprouts first, stir a few times until fragrant, then add the green leaves and stir briefly before serving.
