A delicious Crispy Salt and Pepper Sea Bass recipe.

Deodorize the fish: 1) Butterfly the sea bass and rinse clean. 2) Prepare a light brine with water, salt, cooking wine, and crushed scallion and ginger. 3) Soak the sea bass in the brine for 10-15 minutes.

Remove the fish and pat dry thoroughly with paper towels. Rub the marinade all over the fish inside and out using salt and pepper seasoning, Sichuan peppercorns, cooking wine, scallion segments, and ginger slices. Massage well to ensure even seasoning.

Heat oil in a pan (do not let it get too hot). Pan-fry the fish over medium-low heat on both sides until golden brown and fully cooked through. Caution: Watch out for oil splatter!


Squeeze some lemon juice over the fish when eating. Crispy skin, tender meat, delicious!
