Remove excess fat from chicken breast and slice into 3 pieces. Add baking soda at a ratio of 1g per 500g of meat. Prepare seasonings: scallion-ginger water, oyster sauce, light soy sauce, salt, sugar, cooking wine, and oil (add last). Starch to meat ratio: 110g per 1500g. Water to meat ratio: 350ml per 1500g. Order: baking soda + seasonings + 1/3 of the water, mix from the bottom. Add remaining water in two portions, folding until absorbed. Add oil and fold to coat. Marinate for about 30 minutes. To cook: heat oil over medium-low heat. Once the pan is hot, add the chicken slices. You should hear a sizzling sound. When the bottom half of the meat has changed color, flip it over. It takes about 2-3 minutes to cook through.
