A delicious Baking-Soda Tenderized Chicken Breast recipe.


Slice into thin pieces about 2mm thick. Don’t cut too thin or the meat will fall apart during the washing step; too thick and it won’t be as tender.

Add baking soda — the amount depends on how much meat you have. A little extra is fine since it will be washed off later.

Add water, stir, and let sit for 10 minutes. If you cut the meat thicker, extend the time accordingly.

Rinse 3 times. You must completely wash away all the baking soda — its job is done at this point. If not thoroughly rinsed, the finished dish will have an off taste.


Add your favorite seasoning — here we used New Orleans-style seasoning, but use whatever you like, no restrictions. Key step: add water. For 500g of chicken, the final weight can reach 600g (the meat also absorbs water during rinsing, so adjust to your own situation).

Add water and keep stirring gently — don’t stir too hard or the meat will break apart. Stir until the water is fully absorbed. If you didn’t add enough water earlier, you can add a little more at this stage. The water must be fully absorbable.

Use a non-stick pan without oil. Don’t flip immediately. Don’t worry about overcooking — with this method, the chicken won’t get tough no matter what.

Look at the comparison of these three pieces: the top two are more cooked, the bottom one is less done. When it reaches the level of the top two, it’s time to flip. Otherwise the meat may tear apart.

Since it’s already mostly cooked through, just sear for a few seconds on the other side.
