Hunan-Style Smashed Century Eggs with Roasted Peppers
Ingredients
- 5 screw pepper (luosijiao)
- 8 century eggs
- 8 cloves garlic
- to taste bird's eye chili
Instructions
- Heat a little oil in a wok (just a small amount is enough). Add the de-stemmed screw peppers with a pinch of salt and pan-fry until the skins blister and char.
- You can steam the century eggs for 10 minutes, or use them uncooked directly for the cold dish.
- Add the chopped garlic and bird's eye chilies, then pour hot oil over them. Season with sugar, salt, soy sauce, and vinegar. Mix well and let marinate for 10 minutes.
- If you like, add a drizzle of sesame oil or Sichuan pepper oil for extra flavor!
