Steamed Beef with Pickled Mustard Tuber
Ingredients
- 250g beef
- 1 pickled mustard tuber (zhacai)
- ½ oyster sauce
- ½ light soy sauce
- 1 cornstarch
- a pinch sugar
- 1 peanut oil
- 1 scallions
- 1 ginger
Instructions
- Slice the beef thinly. (Having the butcher slice it works, but machine-sliced pieces may go against the grain and end up a bit thicker than ideal.)
- Add a tablespoon of water to the beef and mix well to help absorb the marinade. Then add cornstarch, oyster sauce, light soy sauce, and a pinch of sugar — mix until evenly coated. Finally, drizzle in peanut oil, mix again, and marinate for 10 minutes.
- Top with julienned ginger and pickled mustard tuber, and mix gently.
- Once the steamer water is boiling, steam for 4 minutes.
- Garnish with scallions and serve — the beef comes out tender and silky with the savory aroma of pickled mustard tuber.
