Deep-Fried Small Yellow Croaker

- 10 small yellow croaker
Instructions
- Clean the small yellow croakers thoroughly. Pull out the dorsal spine from the tail end, cut diagonally at the head and pull out the innards. Remove the black membrane and blood beneath the entrails.
- Prepare the marinade: scallion, ginger, Shaoxing wine, vinegar, 1/3 of the salt, white pepper, and Sichuan peppercorns. Squeeze out the juices, then marinate the fish for 20 minutes.
- Prepare the crispy coating: 30g all-purpose flour, 60g sweet potato starch, and a pinch of baking soda. Mix well and spread on a plate. Place the fish on top, dust another layer of the coating over the fish, then shake off the excess.
- Heat oil to medium-low (about 40% heat). Fry over medium heat to set the shape; once the fish floats, reduce to low heat and fry until cooked through. Raise oil temperature to medium-high (about 60% heat) and flash-fry again. Repeat the re-frying process 3 times for extra crispiness.
