A delicious Braised Beef with Fried Eggs recipe.

Cut beef shank into large chunks. Blanch in boiling water for 5 minutes to remove impurities, then drain and rinse clean.
Place blanched beef in a pot, add enough water to cover. Add ginger slices, scallion stalks, star anise, cinnamon stick, cooking wine, dark soy sauce, and light soy sauce. Bring to a boil over high heat.
Reduce heat to low and simmer for 1.5 to 2 hours until beef is tender. Add rock sugar and salt to taste during the last 30 minutes of cooking.
While the beef braises, fry eggs in a separate pan to make sunny-side-up or over-easy eggs (荷包蛋).
Serve the braised beef with its broth in a bowl, topped with fried eggs. Garnish with chopped scallions.
