Zero-Fail Braised Hairtail Fish
Ingredients
- 2 Hairtail fish
- 3 Light soy sauce
- 1 Dark soy sauce
- 1 Oyster sauce
- 1 Aromatic vinegar
- 1 Cooking wine
- 10 Sugar
- to taste Sichuan pepper, star anise, dried chili
- as needed Scallion, ginger, garlic
- 30 Flour
Instructions
- Clean the hairtail fish thoroughly, cut into sections, and marinate with scallion, ginger, garlic, and cooking wine for at least 20 minutes.
- Place flour on a plate and coat both sides of the fish pieces evenly.
- Heat appropriate amount of oil in a pan, fry the fish on low heat until both sides are golden brown, then remove and set aside.
- In a bowl, mix together 3 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp aromatic vinegar, 1 tbsp cooking wine, 1 tbsp oyster sauce, and 1 tsp sugar (or 3 rock sugar pieces).
- Sauté scallion, ginger, and garlic in a little oil until fragrant.
- Add the spices (star anise, Sichuan pepper, dried chili) and the fried fish.
- Pour in the sauce mixture and toss to coat evenly.
- Add hot water to cover the fish, cover the lid, and simmer on low heat for about 10 minutes.
- Remove the lid, turn to high heat to reduce and thicken the sauce until glossy.
- The finished dish is ready to serve. Does it look appetizing?
