Zero-Fail Braised Hairtail Fish

Ingredients

  • 2 Hairtail fish
  • 3 Light soy sauce
  • 1 Dark soy sauce
  • 1 Oyster sauce
  • 1 Aromatic vinegar
  • 1 Cooking wine
  • 10 Sugar
  • to taste Sichuan pepper, star anise, dried chili
  • as needed Scallion, ginger, garlic
  • 30 Flour

Instructions

  1. Clean the hairtail fish thoroughly, cut into sections, and marinate with scallion, ginger, garlic, and cooking wine for at least 20 minutes.
  2. Place flour on a plate and coat both sides of the fish pieces evenly.
  3. Heat appropriate amount of oil in a pan, fry the fish on low heat until both sides are golden brown, then remove and set aside.
  4. In a bowl, mix together 3 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp aromatic vinegar, 1 tbsp cooking wine, 1 tbsp oyster sauce, and 1 tsp sugar (or 3 rock sugar pieces).
  5. Sauté scallion, ginger, and garlic in a little oil until fragrant.
  6. Add the spices (star anise, Sichuan pepper, dried chili) and the fried fish.
  7. Pour in the sauce mixture and toss to coat evenly.
  8. Add hot water to cover the fish, cover the lid, and simmer on low heat for about 10 minutes.
  9. Remove the lid, turn to high heat to reduce and thicken the sauce until glossy.
