  • 2 Soy sauce
  • 2 Rice wine
  • 1 Sugar
  • 1 Vinegar
  • Salt
  • 3 Ginger
  • 3 Garlic
  • 2 Scallions
  • 2 Cooking oil
  • 1 Water

  1. Clean the small yellow croaker, remove scales and innards. Pat dry with paper towels.
  2. Heat oil in a wok over medium-high heat. Pan-fry the croaker until golden on both sides, about 2 minutes per side.
  3. Add ginger slices, garlic cloves, and scallion whites. Stir-fry until fragrant.
  4. Pour in rice wine and soy sauce, then add sugar, vinegar, and water. Bring to a boil.
  5. Reduce heat to low, cover, and braise for about 10 minutes until the fish is cooked through and the sauce has thickened.
  6. Taste and adjust seasoning with salt if needed. Garnish with scallion greens and serve.
