Braised Small Yellow Croaker
Ingredients
- 500 Small yellow croaker
- 2 Soy sauce
- 2 Rice wine
- 1 Sugar
- 1 Vinegar
- Salt
- 3 Ginger
- 3 Garlic
- 2 Scallions
- 2 Cooking oil
- 1 Water
Instructions
- Clean the small yellow croaker, remove scales and innards. Pat dry with paper towels.
- Heat oil in a wok over medium-high heat. Pan-fry the croaker until golden on both sides, about 2 minutes per side.
- Add ginger slices, garlic cloves, and scallion whites. Stir-fry until fragrant.
- Pour in rice wine and soy sauce, then add sugar, vinegar, and water. Bring to a boil.
- Reduce heat to low, cover, and braise for about 10 minutes until the fish is cooked through and the sauce has thickened.
- Taste and adjust seasoning with salt if needed. Garnish with scallion greens and serve.
