A delicious Breakfast: Scallion Oil Rice Noodles, Mango Smoothie, Soft-Centered Egg & Ginger Baby Bok Choy recipe.

Add the fresh rice noodles, bean sprouts, chili oil, and salt. Cook for 1 min 30 sec at 120°C on reverse speed 1. (I used dried rice noodles here, so I increased the time by 5 minutes. I used pre-made scallion oil so I didn’t add it at this step — if you prefer chili oil, add it here.)

Today’s breakfast lineup: A bowl of aroma (scallion oil rice noodles), a sip of sweet (mango smoothie), a tender bite (soft-centered egg), a plate of green (ginger baby bok choy)

I absolutely love the scallion oil made in the Thermomix — the aroma is incredible! See my previously uploaded recipe for the scallion oil sauce method.

The mango smoothie is sweet, the soft-centered egg is tender. Even the baby bok choy is stir-fried fresh and clean.
