A perfect day of mindful eating begins with breakfast: stir-fried rice noodles take center stage, with a softly cooked egg adding that special touch. A mango smoothie brings sweetness, while bok choy helps balance the richness. Without further ado, let’s dig in! 🍜🥭🥛🥚🥬 A delicious Breakfast: Scallion Oil Rice Noodles, Mango Smoothie, Soft-Centered Egg & […]
| Ingredient | Amount |
|---|---|
| mango flesh, cubed | 100g |
| low-fat milk | 250g |
| water | 500g |
| Yunnan rice noodles, fresh | 100g |
| fresh bean sprouts | 100g |
| scallion oil (or chili oil) | 1 tbsp (or 5g) |
| salt | 1g |
| egg | 1 as needed |

Place the mango and low-fat milk into the main pot.

Blend on smoothie mode for 30 seconds.

Open the lid after blending.

Pour into a glass. Clean the main pot.

Add 500g water to the main pot and bring to a boil at 100°C.

Water is now boiling.

Add the fresh rice noodles, bean sprouts, chili oil, and salt. Cook for 1 min 30 sec at 120°C on reverse speed 1. (I used dried rice noodles here, so I increased the time by 5 minutes. I used pre-made scallion oil so I didn’t add it at this step — if you prefer chili oil, add it here.)

Time’s up.

Transfer to a bowl!

Add a spoonful of scallion oil sauce. The baby bok choy was stir-fried beforehand!

Cook the egg in an egg cooker, cut in half and place in the bowl.

The mango smoothie brings the sweetness!

Scallion oil rice noodles are the star, the soft-centered egg is the soul!

Baby bok choy cuts through the richness!

Today’s breakfast lineup: A bowl of aroma (scallion oil rice noodles), a sip of sweet (mango smoothie), a tender bite (soft-centered egg), a plate of green (ginger baby bok choy)

💯 So satisfying!

Fragrant scallion oil, silky rice noodles! Mix well and dig in!

I absolutely love the scallion oil made in the Thermomix — the aroma is incredible! See my previously uploaded recipe for the scallion oil sauce method.

The mango smoothie is sweet, the soft-centered egg is tender. Even the baby bok choy is stir-fried fresh and clean.

Yep, today was a day of eating well. 🍳
