Chicken and Mushroom Dumplings with Chives
Ingredients
- 400 Chinese chives
- 170 Rehydrated shiitake mushrooms
- 1000 Ground chicken
- 1 Egg
- 2 Salt
- 2 Light soy sauce
- 2 Dark soy sauce
- 1 Chinese five-spice powder
- 1 Garlic powder
- 1 Ginger powder
- 1 Onion powder
- 50 Cooking oil
- to taste Star anise, bay leaves, scallions, Sichuan peppercorns
- 1 Ginger paste
- 3 Cooking wine
Instructions
- Heat 50g oil with aromatics (star anise, bay leaves, scallions, Sichuan peppercorns) to make infused oil. Remove the spices, then sauté the mushrooms. Mix all filling ingredients together and start wrapping the dumplings.
