Clear-Stewed Sanhuang Chicken Soup
清炖三黄鸡 · jiangsu cuisine
The author came home from work craving chicken soup, picked up a chicken at the supermarket downstairs, and simmered it for two hours before going to bed content. The tip: a clear-stewed chicken soup doesn't need many seasonings, which would mask its natural flavor.

Techniques you'll use
- Blanching (chao shui) ↗
Par-cook in boiling water to clean, tighten, or prep ingredients.
- Simmering (dun) ↗
Gentle low-heat cooking in liquid until flavors merge and meat softens.
Steps
Have the sanhuang chicken cut into small pieces at the store. Rinse the pieces under clean water, place them in a pot of cold water, and once the water boils, remove the chicken pieces. Prepare a second pot of warm water.
✅ Done when: The water has come to a full boil and the chicken pieces are ready to be lifted out.
Place the chicken pieces, ginger slices, scallion sections, and dried shiitake mushrooms into the warm water, add a few drops of cooking wine, and use the rice cooker's soup mode, which usually takes two hours, then simply leave it alone.
✅ Done when: The rice cooker's soup mode has finished its roughly two-hour cycle.

Step 3
Once the time is up, add salt, and the chicken soup is ready to enjoy. If you like adding other ingredients such as red dates or goji berries, add them in an appropriate amount before cooking.
✅ Done when: The salt has been stirred in and dissolved, and the soup is ready to serve.
