Crispy Shredded Potato Fritters
炸土豆丝丸子 · pan chinese cuisine
A casual home-style snack. The author notes the same batter also works for potato pancakes, and that less flour makes crispier fritters while a bit more gives a softer bite — a good choice when serving kids. Potato fritters are also considered easier to fry than shredded radish fritters.

Techniques you'll use
- Deep-frying ↗
Cook food fully submerged in hot oil for crisp crust and moist interior.
Steps

Step 1

Shred the potatoes and carrot, and chop some scallions. Add flour and the seasonings. Note: more flour makes the fried fritters doughy; use less if you prefer them crisp — just enough to bind the potato shreds so they hold together. (The same mixture also works for pan-fried potato pancakes.)
✅ Done when: The mixture is evenly combined and sticky enough that the shreds hold together when scooped.

When the pan and oil are hot, drop in portions of the batter — I scoop a chunk straight off with chopsticks, so the shapes are irregular.
✅ Done when: Each portion hits the hot oil and begins sizzling on contact.

Step 3

Continue with the remaining batter in the same way. My batter is on the floury side because my kids eat these — with less flour they turn out too crisp and prickly to bite comfortably.
✅ Done when: All portions are in the pan frying, holding their rough shapes as they set.

I like them larger, so I fry them a bit longer. Once they take on color, scoop them out — adjust to your own preference.
✅ Done when: The fritters are golden brown and can be lifted out of the oil.

Step 5

I especially enjoy potato fritters — they are easier to fry than shredded radish fritters.
✅ Done when: The finished fritters are crisp outside and fully fried through.
