It is rarely used as the primary frying oil, since heat dulls its aroma; instead, it is added at the end of cooking or off the heat entirely.
What it is
Sesame oil is a fragrant oil pressed from sesame seeds, and in Chinese cooking it almost always refers to the toasted variety, which is golden-amber in color and made from roasted seeds. It is prized as a finishing oil rather than a cooking oil because its delicate aromatics fade with prolonged high heat. A small amount adds an unmistakable nutty fragrance to finished dishes.
