Step 1

Prep the ingredients: pork shoulder, ginger and scallion, garlic, and onion.
✅ Done when: All four ingredients are cleaned, trimmed and ready at the stovetop.
First marinade: cut the pork shoulder into chunks and combine with the ginger and scallion, 2 spoonfuls of light soy sauce, 1 spoonful of baijiu (Chinese white liquor), 1 spoonful of white sugar, a pinch of white pepper, and a pinch of pepper-salt seasoning. Marinate for 10 minutes.
✅ Done when: The pork has rested in the marinade for 10 minutes and is evenly coated.

Second marinade: pick out and discard the ginger and scallion, add a little cornstarch and mix well by hand, then add a little oil and continue marinating for another 10 minutes.
✅ Done when: Each piece of pork is evenly coated with the starch-and-oil film after 10 minutes.

Heat oil in a pan, add the pork pieces and stir-fry until the surface is lightly browned, then remove from the pan.
✅ Done when: The pork pieces show lightly browned, slightly charred surfaces.

In the same pan with fresh oil, add the garlic and onion and stir-fry until fragrant.
✅ Done when: The garlic and onion are aromatic and softened.

Return the pork pieces to the pan and toss to combine evenly, then add a little of your favorite seasonings, such as pepper-salt or cumin.
✅ Done when: The pork is evenly coated with the seasonings and heated through.
