Restaurant-Style Hummus (Step-by-Step)

保姆级餐厅食谱-鹰嘴豆泥hummus · pan chinese cuisine

25 min total15 min cooking15 stepssavory

The author first developed this hummus for catering at a restaurant in 2012, where it was stuffed into bread for panini. It has remained a household favorite for over ten years. Cooked chickpeas are a low-GI, high-protein, high-calcium staple. Note: hummus spoils easily because of its high protein content — refrigerate if not eaten right away, and finish it within 24 hours; spoiled hummus turns sour.

Steps

Soak the dried chickpeas in cold water overnight in a large container with plenty of water, since they more than double in size as they soak. The author cooks dried chickpeas rather than using canned ones for fresher flavor. In hot weather, don't soak too long or they can spoil — if soaked but not ready to cook, refrigerate them. About 100 g of dried chickpeas yields a little over 200 g soaked.

✅ Done when: The beans have swollen to more than double their dried size after an overnight soak.

Put the soaked chickpeas in a pot and add fresh water to cover by about a finger's depth. Optionally add a small spoonful of baking soda to help the beans soften. Cook over low heat; once the water boils, start timing — the author cooked them 15 minutes. Taste a bean: it should be cooked through and slightly soft. Let cool naturally to room temperature. (The author soaked 300 g of dried beans, used a third, and froze the rest, drained; frozen cooked chickpeas give a marginally coarser puree but the difference is negligible.)

✅ Done when: A tasted bean is fully cooked and slightly soft after about 15 minutes of simmering.

  3. 3

Add the cooked chickpeas, salt, sugar, lemon juice, minced raw garlic, sesame-peanut spread, good-quality olive oil (this matters for flavor), water, and cumin to an immersion blender cup and blend with a stick blender. A high-speed blender gives a finer result, but scraping the thick puree out of one is difficult — the stick blender is much easier. On tahini: authentic hummus uses Middle Eastern tahini; the author uses a sesame-peanut blended spread for a mellower flavor, but choose tahini if you prefer a cleaner taste.

✅ Done when: All ingredients are fully combined into a thick, uniform puree.

  4. 4

    Step 4

    Restaurant-Style Hummus (Step-by-Step) — step 4 visual checkpoint.

A note on the cumin: it is an important flavor source even though you only need a pinch. Whole cumin seeds or ground cumin both work, but don't use ground cumin that has been stored a long time — its flavor will have faded.

✅ Done when: Fresh, aromatic cumin (whole or freshly ground) is added to the blend.

  5. 5

    Step 5

    Restaurant-Style Hummus (Step-by-Step) — step 5 visual checkpoint.

After blending, the mixture should be a slightly thick paste — blending with a stick blender takes a bit of effort, and a high-speed blender would make it smoother. Scrape it into a serving container.

✅ Done when: The puree is thick and holds its shape when scraped into the container.

Use a medium spoon to smooth and shape the surface. You can also make other patterns, such as dragging a fork through it for texture. Chickpeas vary in how much water they absorb, so the puree may come out too thin or too thick — adjust the water to suit your beans.

✅ Done when: The surface is smoothed into an even swirl or textured pattern.

  7. 7

    Step 7

    Restaurant-Style Hummus (Step-by-Step) — step 7 visual checkpoint.

Drizzle olive oil over the top — use a good olive oil.

✅ Done when: A glossy pool of olive oil coats the shaped surface.

  8. 8

    Step 8

Scatter the reserved extra cooked chickpeas on top as garnish; the author also added a bit of smoked chili. Other garnish options include diced onion, diced cucumber, pomegranate seeds, and more — garnish freely, just nothing that clashes with the hummus.

✅ Done when: The top is decorated with chickpeas and any optional garnishes.

Classic serving: vegetable sticks plus pita bread, as many casual lunch spots do. Good vegetable sticks include cucumber, carrot, celery, and white Belgian endive (chicory).

✅ Done when: Vegetable sticks and pita are arranged alongside the hummus for serving.

It also pairs well with pita pockets; the photo shows avocado puree, for reference only.

✅ Done when: Hummus is served stuffed in pita pockets.

  11. Restaurant-Style Hummus (Step-by-Step) — step 11 visual checkpoint.

The author likes to dice tomato, cucumber, onion, and cilantro, toss with salt, pepper, and a little lemon juice, and serve that salad with pita and hummus — essentially a Middle Eastern street-food pairing, sold at street stalls in European countries with large Middle Eastern communities, typically filled with falafel, tahini sauce, fried eggplant, onion, and tomato.

✅ Done when: The diced salad is seasoned and mixed, ready to serve with pita and hummus.

Another option is to use the hummus in sandwiches; it pairs best with fresh, crisp fillings like tomato, cucumber, and lettuce.

✅ Done when: The sandwich is assembled with hummus and crisp vegetables.

You can also blend beet or sweet pepper into the hummus for a variation — worth trying.

✅ Done when: The variation hummus is blended smooth with the added vegetable incorporated.

For parties, blend three times the recipe amount in a high-speed blender, cut a big pile of cucumber and carrot sticks, add some bread, and serve on two large platters.

✅ Done when: A large batch of hummus plus vegetable sticks and bread is laid out on platters for guests.

For a more elegant presentation, serve individual small portions — as the author did at an event for a few dozen people.

✅ Done when: Each guest has an individually plated small serving.
