Steps

Step 1

Gather the ingredients. The beans may be soaked ahead of time or used unsoaked; if soaked, the beans can be eaten along with the liquid.
✅ Done when: All ingredients are measured out and the beans are soaked (or left dry) and ready to cook.

Combine everything with 1000 ml of water in an electric kettle or multi-cooker and cook for 45 minutes. For a more traditional approach, use a clay pot: watch the heat, and once it comes to a boil, reduce to low and simmer for 30-45 minutes.
✅ Done when: The mixture has simmered the full 45 minutes (or 30-45 minutes at a low simmer in a clay pot).

Step 3

Strain out the liquid, sweeten with rock sugar to taste, and serve. The author drinks only the strained liquid; it is pleasantly sweet and tangy and can be enjoyed daily for up to a week.
✅ Done when: The liquid is strained clear and the rock sugar has dissolved into a sweet-and-sour drink.
