Taste & Role
🍯 Sweet
Used primarily in slow-simmered soups, congees, and braises, where they add body, plant protein, and a hearty texture. They are also the raw material for fermented black beans and appear in desserts and health-focused tonics.
What it is
Black beans (hei dou) are whole black soybeans, a staple legume in Chinese cooking with a matte black skin and creamy pale-green interior. They are different from Latin American black turtle beans and from the salty fermented black beans (douchi) used as a seasoning. In Chinese kitchens they are most often soaked and then simmered slowly.
