Techniques you'll use
- Aromatic blooming (bao xiang) ↗
Bloom ginger, garlic, and chili in hot oil to build the aroma base.
- Stir-frying ↗
Cook small pieces in stages, then bring them together while their textures are distinct.
- Simmering (dun) ↗
Gentle low-heat cooking in liquid until flavors merge and meat softens.
Steps
- 1
Step 1

Rinse the hyacinth beans well and snip off both ends. Cut the garlic into small pieces — slightly larger than minced garlic but smaller than garlic cloves.
✅ Done when: The beans are clean with trimmed ends, and the garlic is cut into small, evenly sized pieces.

Heat the wok, add oil over low heat, add the garlic, and stir-fry for 10 seconds.
✅ Done when: The garlic is fragrant after about 10 seconds of stirring.

Immediately add the hyacinth beans. Stir-fry over medium heat briefly, then add a small half-bowl of water, cover, and braise over medium-low heat for 5 minutes.
✅ Done when: After 5 minutes covered, the beans have softened slightly from the steam.

Step 4

You can lift the lid partway through to check and manage the timing yourself.
✅ Done when: The beans look tender and most of the water has been absorbed.

Add the broad bean paste and light soy sauce, and keep stir-frying over medium heat until the beans are fully cooked.
✅ Done when: The beans are tender all the way through and evenly coated with the sauce.

Step 6
Medium heat
Finally, sprinkle in sugar to taste and remove from the wok.
✅ Done when: The sugar is dissolved and evenly distributed, and the dish is ready to plate.
