A delicious Foolproof Stir-fried Eggs with Green Peppers recipe.

Crack the eggs into a bowl. You can add a pinch of salt and a dash of white pepper (to remove any egginess).

Remove the seeds from the green peppers and cut into even pieces. Dry-toast them in a wok without oil over low heat until blistered and fragrant, then set aside.

Heat the wok, then add cold oil. Toss in the scallion segments and the toasted peppers. If the eggs weren’t salted enough, add a bit more salt now. Stir-fry until fragrant, then pour in the beaten eggs. Don’t stir right away — let the bottom set first.


Continue stir-frying for 1–2 minutes, then turn off the heat and plate up. You’re done! The finished dish is vibrant and bright — golden eggs with emerald peppers, the egg and pepper aromas melding together in a savory, mildly spicy bite. It’s the perfect rice-killer, delicious alongside steamed rice, mantou, or noodles.
