A delicious Garlic Lemon Roasted Sea Bass recipe.

After cleaning the sea bass, rub both sides with salt and pepper and marinate for at least 20 minutes. Use a bit more salt for better flavor, adjusting to your taste.

Prepare the ingredients: garlic, cilantro, and olive oil. Adjust the ratio to your taste — a suggested ratio is 2:1:3 (garlic : cilantro : olive oil).

Zest the lemon and squeeze out the juice. If you prefer less tartness, use only half the lemon’s juice. Mix the lemon zest, lemon juice, minced garlic, cilantro, and olive oil together. Set aside.

Once marinated, line a baking sheet with foil. Spread the herb mixture underneath and on top of the fish, and stuff some inside the cavity as well.

Seal the foil tightly — this keeps the fish more tender when roasting. Bake on the middle rack at 200°C (400°F) for 30 minutes. Adjust time according to your oven’s temperament.
