A delicious Pan-Fried and Oven-Roasted Capelin recipe.

Preparation: Thaw one box of capelin (340g, about 17 fish). Pull out the innards from the gill area and remove the heads. Pat dry with paper towels.
For pan-frying: Take 7 fish that have some damage/breakage. Marinate with garlic powder and salt, then coat lightly with cornstarch. Heat a non-stick pan with a little oil over medium heat (level 5). Pan-fry the fish until cooked on all sides, then sprinkle with cracked black pepper.
For oven-roasting: Take the remaining 10 intact fish. Add salt, white pepper, soy sauce, oyster sauce, cooking wine, and julienned scallion and ginger. Toss to coat evenly, then add oil and marinate in the refrigerator. Roast in the oven at 360°F for 20 minutes, flipping halfway through. Sprinkle with barbecue seasoning before serving.
